Yeah, I think you might need to drop the price, maybe to USD 4.99 and make it up with a service bundle or offering (I'd say both GraphvizExchange in a box and a hosted service with enough free months to act like a site license).

I'm gonna be radical and say that the decision point for people is the ability to try drawing the diagrams. Given the Apple stringent rules, how about making it 
i) unlimited diagrams
ii) no export/import - that's "added value" on the full version and, most radically
iii) no editing of labels. People can see the video of that, they know what a keyboard is like on iPhone and this is the best way to prevent it being a cannibal.
OR
iii) you can edit labels but not remove items from the graph nor change their shapes/styles. This will cannibalise some sales but does make the lite version useful enough that people will actually use it, avoiding the backlash of "lite is really a crippled trial".
