I haven't drawn the pretty architectural diagrams yet but the modules  
are roughly:

geom (C++)
graphkit (Objective-C)
graphkitdraw (Objective-C++)
graphviz
recog (C++)

+ the iphone specific part.

The Objective-C/C++ portions are not iPhone-specific but are tied to  
Cocoa i.e. either Mac OS X or iPhoneOS needed. The pure C++ portions  
are somewhat platform indepedent. The modules are all functionally  
independent, using just the API for integration.

I also made several iPhone-specific changes to graphviz which would be  
useful for people who want to get it on iPhoneOS, now that the NDA  
over released iPhone software is defunct. Once I've worked out the  
bits and pieces and it all settles down, I'll commit them back to the  
mainline if you want the code back. (I only bothered to port the  
minimal graphviz modules necessary to get it running.)
