I've applied your Italian translation.

Two things concern me though:

1.	You use the same word for Cancel and Delete?
2.	The same word for Edge and Border?

According to http://it.wikipedia.org/wiki/Teoria_dei_grafi, would  
graph(s) = grafo and edge(s) = archi ?
